Bread Pudding

Makes enough for 6

2 cups stale bread crumbs
7/8 cup vegan whipping cream
3 T margarine
4.5 tsp Vegg Baking Mix whisked with 1 cup water
1.5 tsp vanilla extract
3/4 tsp cinnamon

Place bread crumbs in a greased 8-in. x 8-in. baking dish. In a large bowl, whisk the Veggs, vegan milk, vegan whipping cream, sugar, margarine, vanilla and cinnamon. Pour evenly over bread. Bake, uncovered, at 350° for 40-45 minutes or until a knife inserted near the center comes out clean. When cooled, place in refrigerator for two hours. Cut and serve.
