Carbonara with Smoked Sun-dried Tomatoes and Marinated Tempeh

Makes enough for 6-8

Ingredients:

1/4 cup vegan margarine
1/3 cup flour
2-3 cups water
1/2-1 tsp salt
1 squirt dijon mustard
3-4 T nutritional yeast
3-4 T grated vegan cheese
3 tsp The Vegg Vegan Egg Yolk
1/2-1 box spaghetti pasta

Toppings: chopped, smoked, sundried tomatoes,  tempeh bacon and parsley

Directions:
Melt margarine in saucepan. Slowly stir in flour. Whisk in water and keep whisking until thick. Once thick add salt, mustard, nutritional yeast, vegan cheese. Stir until smooth. Remove from heat 10-15 minutes. Put in blender with The Vegg Vegan Egg Yolk and blend 3- seconds. Pour over noodles and top with tempeh bacon, sundried tomatoes and parsley.
